Michelin-Trained Chef Blends Historic Charm, Bold Flavors At New CT Shoreline Restaurant

A former military museum has been transformed into a new culinary destination along the Connecticut shoreline.

Charter Oak Tavern celebrated its grand opening in Westbrook on Thursday, Feb. 20. The restaurant is located at 24 Westbrook Place, right next to the town green.

Michelin-trained Chef Scott Quinn opened the tavern as he returns to his home state after an acclaimed career in some of the world's top kitchens. With more than 20 years of experience, he has worked in Michelin-starred restaurants and led renowned spots like Bouchon in Las Vegas, Bistro Bagatelle in Los Angeles, and Wayfare Tavern in San Francisco.

Quinn's vision for Charter Oak Tavern is more than just a menu—it's a gathering place where local ingredients meet modern culinary approaches.

"His commitment to quality, precision, and creativity ensures that every plate tells a story of craftsmanship and passion," the tavern's website said.

Set in the former Military Historians Museum building, the space highlights the historic charm of downtown Westbrook. Charter Oak Tavern's menu features bold, seasonal flavors, from salmon crudo with everything bagel chips to forest mushroom bolognese and a New York strip with green peppercorn au poivre.

The winter menu highlights dishes like crispy green olive polenta, short rib croquettes, and pan-seared salmon with pearl barley risotto. Tavern staples, including a brie-topped burger and mac & cheese with aged cheddar, round out the offerings.

Charter Oak Tavern is open for dinner on Tuesdays through Saturdays from 5 to 10 p.m.
